The Ultimate Salad Book by Chantal Lascaris- A Recipe Book Review

People say: “The west was not won by eating a salad” or “You don’t win friends with a salad!” However I really would like to beg to differ. A salad can be so much more than just lettuce, cucumber and tomato. A salad can be delicious, satisfying and totally exciting.

The best thing is you don’t have to do it alone! Chantal Lascaris is ready to help you, with her knowledge and experience of being a longstanding champion of home cooking. She will teach you in how you can celebrate salads in a way that’s totally exciting, fun, nutritious and – most importantly – absolutely delicious.

Launching her newest recipe collection, The Ultimate Salad Book you will soon see how passionate she is for healthy living. Her salad recipes are bursting with flavours from around the world. It also features a huge selection of recipes that will inspire any home cook to cook up a storm that will blow your guests away.

Have you ever heard the saying healthy living starts with eating a salad a day? Well science says that may well be true, omitted to healthy living Chantal Lascaris, says it’s officially time for the salad to take centre stage. And YES! we are listening.

What I really love about her Ultimate Salad Book is there is over 100 tried and tested recipes. They are very simple to make and not over complicated. Easy instructions to follow along with stunning illustrations it makes you super excited. It makes you want to roll up them sleeves and get down in the kitchen.

You also don’t need to spend hours in the kitchen cooking up a storm for a healthy and delicious meal. NOBODY and I mean NOBODY wants to be slaving away especially in front of a hot stove on a hot Worcesters summer’s day. You want simple, less fuss but super, tasty meals. Her book has a good balance of recipes.

Another thing that I like is that most of her ingredients are affordable. Times are tight and if you are on a tight budget many of these recipes are affordable. You don’t need to sell your left kidney to make a delicious meal. There are a few ingredients which are on the super expensive side like fresh tuna, kingklip, crayfish and beef fillet.

Her recipes are so versatile you can easily find substitution by replacing a fillet with a rump steak.

Honestly if you are cooking for a super special occasion it is nice to have these options especially if you want to pull out all the stops.

The Ultimate Salad Book is broken into 8 catagories:
Classic Salads,

  • 3 Ingredient Salads;
  • Vegetarian Salads;
  • Fish and Seafood;
  • Poultry;
  • Meat;
  • Fruit;
  • and then Dressings.

Your classic salad recipes are salads are the likes of a Greek Salad, Bean Salad, and Onion Salad.

The super easy 3 ingredient salads are perfect for mid week cooking. For example roasted cauliflower, onion and coriander salad or a mushroom, parsley and Parmesan salad with a honey mustard dressing. I know right! 🤤🤤🤤

The plain vegetarian salads is a nice option for those meatless days but OH! do not note these recipes are definitely not so plain. Some of the recipes can be served as a side dish such as the Mid Summer Blueberry and Spinach Salad or some recipes are totally substantial you can enjoy it as a meal on its own.

Like seriously – how does the following sound: roasted/char grilled butternut, sauteed mushrooms, toasted chickpeas, feta cheese, poached egg, and adding a Moroccan twist – harissa paste served all on one plate? This my darlings is called a breakfast salad. Man this is making me drool all over my keyboard. Dinner is still far away 😥

Yes and then we have the salads that will satisfy even the most fussiest salad eaters! Yes my darlings even men will love these salads. Why? Well, yes you guessed it, key ingredient … meat!

A great selection of Fish and Seafood, Poultry, and Meat Salad recipes will leave the guys totally wanting to be a salad addict! Not convinced that a man will enjoy a salad for supper guess again. Blue Cheese Steak Salad anyone? or

What about a Beef Tagliata salad with mushrooms, beef fillet, roasted tomatoes, and shaved parmesan served with a truffle oil yoghurt/mayo dressing? Or a Herbed Cranberry and Chicken Salad?

Adding a cherry on top is my ultimate favourite section. Chantal throws in some seasonal fruit salad recipes! These recipes are so good – I mean who thought of having a salad for dessert? Not convinced? Well how does a Peach and Plum Caprese Salad sound?

Or a very Cherry Berry Salad? Pina Colada Salad consisting of bananas, pineapples, mangoes and cape gooseberries with a dressing consisting of pineapple juice, coconut cream and cream topped with toasted coconut. Need I say more?
