Stellenzicht Thunderstone With a Creamy Tomato and Chorizo Soup

As the winter sets in…. the North Westerly wind gusts through your bones bringing along a good solid down pouring of rain, and icy cold snow on the mountains. All you want to do is curl up on the couch…. with your favourite blanket and Netflix – supper is almost the last thing on your mind – too cold to move around, needlessly pottering around in a freezing cold kitchen. But now… what if I tell you I have the perfect bowl of comfort and it is super easy to make. Even better it goes gorgeously with a big and bold red wine?

Don’t believe me – well here it is. Stellenzicht Thunderstone Red Blend which is a traditional Helderberg blend consisting of Cinsault, Shiraz and Cabernet Sauvignon. This fruit driven wine with delicate tannins is the perfect blend to go with a super duper quick and easy Tomato and Chorizo Soup. Oh Yes! Don’t forget that delicious freshly baked Ouma or plaasbrood to help soak those mouthwatering goodness.

Stellenzicht is one of Stellenbosch’s most beloved wineries, lying within Stellenbosch’s Upper Blaauwklippen Valley, in the foothills of the Helderberg mountain.

Ancient soils alongside the Helderberg ecosystem creates a unique environment for viticulture and winemaking. The iconic dragonfly is an ever-present sign of nature in fine balance, just as every wine should be. And this my wine friends is what Stellenzicht is all about.

You might be wondering about the name of the wine – why Thunderstone? So the tale goes … People believed that the stone age hand axes they found were the result of lightning striking the soil and shaping the rocks. The Dutch called them “Dondersteentjies”.

Vine to Wine

As mentioned the wine is a blend of 40% Cinsault; 30% Syrah; 30% Cabernet Sauvignon.

30% of the grapes are whole bunch fermented or co-fermented with some added whole bunches.

During the 7-10 days of fermentation the wine is pumped over three times a day .

Some of the grapes receive extended skin contact after fermentation before it is pressed and racked to barrel.

The wine is matured in French oak barrels for up to 18 months, before blending and bottling.

Stellenzicht Thunderstone Tasting Notes

If anyone knows me I am a huge Cinsault fan – So I was very excited when I received this bottle. The Cinsault makes the wine delicate and adding its favourite blending partner – Shiraz it gives the wine a little punch.

You get delicate perfume and intricate aromatics. On the nose you get prominent raspberries, strawberries, pomegranate and cherries along with peppercorn and cardamon. The palate is medium-bodied brimming with freshness and the same juicy red fruits found on the nose coming through on the palate. Hints of sweet spice (cloves and licorice) a little smokiness, a touch of leather and earthiness. The tannins are tannins lacy giving the Stellenzicht Thunderstone a soft finnish. It is a real comforting winter wine.

If drinking this wine in Autumn or Summer I would highly recommend that you put this red in the fridge for a maximum of 30 minutes. Just helps to cut through those tannis from the Shiraz and Cinsault always needs to be slightly chilled. 🙂

Creamy Tomato and Chorizo Soup

Tomato soup lovers this one is for you. It is so easy to make. I promise you within 15 minutes you will have a delicious soup ready for dinner or even lunch, off course added a slight variation to the recipe. Sauteeing some onions because onions just make the world a better place. I also sauteed the garlic before hand to help tone them down a little and make them sweeter. Of course you can then deglaze the pan with a little splash of wine 🙂 I mean what would a dish be in My Boozy Kitchen without a splash or two of booze?!

I did receive a beautiful package from Stellenzicht to be part of a cook off – I didn’t win though, but it was so much fun and would love to do another again soon.

The cream cuts away the acidity from the tomatoes, and the chorizo adds a little heat and smokiness which all compliments the wine. Who said you can’t have wine and soup?

Creamy Tomato and Chorizo Soup

A super duper quick and easy delicious soup – it will have you back under the blanket and Netflix within 20 minutes. Bonus: It is totally comforting and pairs perfectly with Stellenzicht Thunderstone Red

Equipment

  • Food Processor

Ingredients

  • 3 400g Chopped Tomatoes Cans
  • 1 cup Vegetable Stock
  • 3 Garlic Cloves Sliced
  • ½ tsp Chili Flakes
  • ¼ tsp Dried Oregano
  • 1 Onion
  • 100 g Chorizo sliced into rounds
  • 45 ml Extra Virgin Olive Oil
  • Sea salt and freshly ground black pepper
  • ½ cup Cream
  • Fresh Basil Leaves

Instructions

  • Saute Onions, Garlic, and chili just until fragrant, slightly golden brown and translucent. About 3 minutes. Once ready remove from heat.
  • Combine the tomatoes, stock, onion, garlic, chili, oregano in a food processor and blitz until smooth.
  • Pour the mixture in a saucepan and simmer for 10 minutes.
  • Add the cream and simmer for another 2 minutes. Season to taste.
  • Fry the sliced chorizo in olive oil for 2 minutes and the chorizo and the flavoured oil to the soup. Reserving a few for garnish.
  • Garnish with a swirl of cream, 3 slices of chorizo, fresh basil leaves and a good crack of black pepper.
  • Serve with Stellenzicht Thunderstone Red.
