Baking is my passion, but let’s face it, some days are better than others. Okay… Okay… I will confess, I do tend to have more bad baking days. That horrid rule of sticking to the recipe is so difficult. So, when I do decide to bake, I’m always on the lookout for recipes that are foolproof and fabulous. And boy, do I have a treat for you! This Muscadel Bundt Cake only takes 5 ingredients! I also had a bottle of Nuy Muscadel 2013 wine lying around, and I wanted to turn it into something extra special. After a bit of googling, I stumbled upon a recipe for Sherry Wine Cake. But I decided to twist things up a bit and use Muscadel wine instead of Sherry. Trust me, you won’t regret it.
A muscadel bundt cake, is well a cake that uses muscadel wine as a key ingredient. It is a sweet and fortified wine made from Muscat de Alexandre grapes. In South Africa Muscat de Alexandre is commonly known as Hanepoot.
Muscadel or Hannepoot is very much loved for their aromatic and floral qualities. This is why it is often used to produce sweet and fortified wines. So, one can imagine on how these flavours will pull through into the cake!
Muscadel Wine A Sweet Rich History
Muscadel wine is a vintage treasure from South Africa’s vineyards. The oldest vines that still produce wine is currently found in the Breedekloof Wine Valley which was planted in 1883.
Muscadel has charmed the palates of kings and queens, bards and scribes, and even mighty rulers since the begining of the South African Winemaking history.
In the good old days, Constantia wine was the cream of the crop of dessert wines! – A sumptuous sip that tickled the senses of the high and mighty. Everyone from Otto von Bismarck to King Louis, to the English PM, all lusted for the heavenly drink, and had it delivered to their majestic mansions.
“Marianne found comfort in a goblet of Constantia wine – the sweet ambrosia of South Africa that could heal any ailment or sorrow, especially when her heart was shattered by a scoundrel”. Jane Austen was a connoisseur of wine wisdom and often used it in her writings. Napoleon too was a huge fan! Legend goes that on his final hours on his death bed he demanded crates of Constantia Wine to his lonely isle.
An unopened bottle of this Grand Constance 1821, originally destined for Napelon, sold for R967 300 in 2021.
Nuy Muscadel 2013

Nuy Muscadel 2013 is a dessert wine from South Africa. Locally produced by Nuy Winery in the Nuy Valley at the foot of the Langeberg Mountains. Made from Muscat grapes, the wine boasts a rich straw color, a bouquet of Muscat and raisins, and a syrupy texture. It has an alcohol content of 16% and a residual sugar of 206.8 g/L. It received a score of 93/100 from WineMag.co.za, which praised its complex aromatics and pure and fresh palate.

Muscadel Bundt Cake
Equipment
- 1 Stand Mixer
Ingredients
- 1 Box Ina Paarman Vanilla Cake Mix
- 90 grams Moir's Instant Vanilla Pudding Mix
- 4 large Eggs
- ¾ cup Coconut Oil
- ¾ cup Nuy Muscadel
- 1 teaspoon Nutmeg (Optional)
- 1 tablespoon Icing Sugar
Instructions
- Preheat the oven to 180℃
- Combine all cake ingredients into a stand mixer and mix for 5 to 8 minutes.
- Pour batter into greased and floured bundt (don't forget to flour your bundt pan) bundt. Bake for 40 to 45 minutes until a toothpick inserted in the center comes out clean. If you notice the cake is turning too dark cover with parchment paper to prevent burning.
- Allow to cool in pan for 10 minutes before gently turning the cake out. Dust with icing. Slicing and serving with a glass of Nuy Muscadel 2013
